Job Details Leopardo, a new restaurant by acclaimed 3 Michelin starred Chef Joshua Skenesis now open. Looking for positive minded hospitality professionals at the top of their game. We are currently seeking a dedicated and skilled Assistant Baker to join our culinary team. The ideal candidate will bring a passion for culinary excellence, strong organizational skills, knowledge of doughs, starters, production, and strong attention to detail. Some pastry experience is preferred. As the assistant baker, you will be responsible for assisting in all dough production, shaping, and maintenance of starters and preferments. You will work closely with the kitchen team, Head Baker, and Executive Chef to ensure the quality and consistency of the dough program, while also contributing to menu development and maintaining a clean and organized kitchen Key Responsibilities include: Starter Management: Ensure the continued health and flavor of the starters and preferments with a precise feeding and maintenance schedule. Be responsible for the feeding of starters throughout all times of the week. Cooking Techniques: Demonstrate proficiency in various methods of baking and production. Consistently produce doughs that meet or exceed the chef's standards. Test each dough for consistency and quality. Check in with Head Baker about the needs of the program. Constantly strive to improve the baking program and make production more efficient. Kitchen Organization: Maintain a clean and organized work station. Ensure proper storage and labeling of ingredients to prevent cross-contamination. Manage all baking related product including flours, yeast, and spring water. Ensure the organization, and cleanliness of all specialty baking equipment including mixers, proofers, and dough boxes. Set up and break down station adhering to Leopardo's standards. Monitoring and informing the Head Baker of any problems with equipment, refrigeration, or tools that the Head Baker uses every day. Quality Control: Monitor and maintain the quality of all ingredients used in the kitchen. Conduct regular tastings to ensure doughs meet our standards of flavor, balance, and execution. Team Collaboration: Work closely with theHead Bakerand other kitchen staff to coordinate and execute the program efficiently. Communicate effectively with the kitchen team and front-of-house staff. Adherence to Health and Safety Standards: Adhere to all health and safety regulations and guidelines. Ensure the proper handling and storage of food products to prevent spoilage and contamination. Qualifications: Proven experience as baker, or pastry chef with baking experience in a fine dining or upscale restaurant. Culinary degree or relevant certification is a plus. Knowledge of various baking methods and techniques. Ability to work in a high-pressure, fast-paced environment. Strong attention to detail and commitment to quality. Excellent communication and teamwork skills. 1Years ofBaking or Upscale Restaurant experience Physical Requirements: Ability to stand, kneel, crouch for extended periods of time Lift and carry heavy pots, bags, and other kitchen equipment up to 50 pounds Work in a hot and fast-paced kitchen environment.
